In the International Journal of Environmental Research and Public Health, Nova Scholar Susan Prescott, Fellows Chris D’Adamo and Alan C. Logan, and other speakers from the recent Nova Campfire, “The Future of Food,” aggregates the rich, diverse conversations around ultra-processed foods (UPF) during this meeting.
The human and environmental impacts of plant-based “meat” production, the health implications of non-nutritive additives, and ongoing research into the gut-brain axis, among others, point to serious risks from UPF for human and planetary health. Authors call for critical and nuanced media coverage of UPF to enhance public awareness and re-examine practices and policies.
